Twenty-two seats. A menu that changes when the market changes. Maison Verlaine is a neighborhood kitchen,
serious without trying to be.

Light wood,
raw linen,
open kitchen.

A large communal table in the middle, six private tables along the walls. The kitchen has no walls — you see the chef, hear the pans, smell the stocks. A room that doesn't cheat.

Thirty years in the kitchen, ten spent chasing stars, twenty understanding it wasn't the right race.

Joachim Verlaine trained at Veyrat in Annecy, then Passard at L'Arpège. A decade of double services, blood-hot tempers, specialised press.

In 2024 he opens Maison Verlaine in Toulouse: 22 seats, short menu, growers within 50 km, hands back in the dough. Not a return to roots. A different departure.
